Recipe: Baked Salmon with Vege Parcels

Sound a bit fancy for the campfire? Well believe me, it isn’t! For this recipe you’ll need a total of 6 ingredients, and maybe a little salt and pepper to taste.

Start with the Vege Parcels

You will need:

  • Whole small potatos
  • A whole fresh beetroot, cut into quarters
  • Carrots
  • Chef-in-a-can (spray oil) or regular oil
  • Salt and pepper to serve
  • Some aluminium foil

Method of creation:

Lay out enough pieces of aluminium foil for one vege parcel per person. Spray the foil with spray oil. Place the vegetables on this, and spray them too with a little oil. Place each parcel into a moderate-hot camp oven (180-200c) and roast for one hour. Get these on the go first, they will take longer than the salmon.

Baked Salmon

You will need:

  • 2 salmon portions, halved
  • 2 grapefruit
  • Aluminium foil

Slice the grapefruit.  Place 2 slices onto the foil, top with Salmon portions, place 1 to 2 more grapefruit slices on the top.  Wrap the parcels and wrap again. This will keep the salmon juicy, and the camp oven clean. Place on trivet in camp oven pot and roast for 20 minutes.

Bring it all together

Remove both camp ovens from the heat, open up a vege parcel and check they aren’t too hard by poking with a fork or skewer. Empty the contents of the parcel and a piece of salmon onto each plate and serve with salt and pepper and perhaps a side of steamed vegetables.
